Chicago Pork Roast with Dill Sauce

I got inspired by the chicken soup so I decided to cook for the week. Saves worrying about what to do for dinner when I get home.

There was a big pork roast in the freezer and since I already had the dill I decided on this recipe. Besides I really love the taste of dill.

First I needed some onions and celery.

Then the dill.

The roast seasoned and stuff with some of the dill.

The roast smothered with chopped onions and celery sauted in unsalted butter.  Ready for the oven for 2 1/2 hours of slow cooking.
